Southwest Chicken Recipe

This recipe is written for crock-pot cooking, but it is easily converted to stove-top (see below).

Stove-top directions:

Brown the chicken with a tablespoon of oil in a non-stick or cast iron pot. Stir in the other ingredients (except rice) and bring to a boil; reduce heat and simmer for about 45-60 minutes, until chicken is cooked through. Shred the chicken, cook for another 15 minutes and serve over rice.

My Hard Corps Adventure

I have truly become a fitness junkie. I especially enjoy trying new workouts that will challenge me. My new favorite challenge is 22 Minute Hard Corps, a boot camp style of calisthenic workout. While I still can’t do a pull up or a chin up, my “frog burpees” are coming along nicely! And each day that I show up, I get stronger. I get better.

“Sit” by the Minute

FitMinute BallChairI ditched my desk chair for my exercise ball. Glad I made the switch. This is my kind of multi tasking. I’m sitting up taller and working on balance while working at my desk. Makes me feel more productive! 🙂
